How do I make a burrito?

It’s all in the fold! Take a soft tortilla, pile in your filling leaving a few centimetres space at one end. Fold the end of the tortilla over the filling, then fold one corner over again. Roll it up tightly, tucking in the closed again nice and tight, so that nothing can escapes! Easy when you know how!

I’m vegetarian but lots of your recipes have meat in them - what would you recommend as vegetarian alternatives?

You’re right, Mexican food does quite often involve meat, but it can be great for veggies too!  Just substitute your favourite veg - courgettes, red, green and yellow peppers, mushrooms or try butterbeans.  You could, of course, also use a meat substitute.  And for a little more inspiration, try our vegetarian recipes here.

Help - how can I cool down my Mexican meal if I don’t like things too spicy?

We might be stating the obvious here, but none of our recipes should be that spicy!  But if you’ve overdone it, drinking milk or a yoghurty drink helps - as does eating something starchy like bread - or tortillas, in our case!.  And to take the edge off something spicy before you eat it, try adding a dollop of sour cream.

What’s the difference between a taco and a tortilla?

Tortillas have been a staple of the Mexican diet since the ancient Aztec and Mayan civilisations over 12,000 years ago!  They’re a type of flat bread and can be hard or soft, made from corn or wheat flour - then filled with meat or veg and rolled up. Tacos are made with tortillas - They are just fried until they’re crunchy and curled up at the sides, all ready for you to stuff!

Refried beans sound really unhealthy – is that true?

No - in fact, this is a mis-translation from the Spanish ‘Frijoles Refritos’ - it actually means ‘well fried beans’ rather than fried more than once!   They’re typically made with pinto beans, or sometimes black or red beans, soaked overnight then mashed and drained to make a dry paste. Sometimes vegetable stock is added, then they’re fried once in oil or butter and seasoned with salt and spices.

I’m allergic to dairy – what can I use instead of cheese and sour cream?
Try soya or tofu! Ask for soya-based or tofu-based cheese in your supermarket or health food store. And for sour cream, try natural soya yogurt – it’s a tasty alternative and it’s usually lower in fat, too! 

What’s a fajita?

A fajita is a soft flour tortilla wrapped around a mouth watering combination of sizzling meat, crunchy peppers and onion topped off with a big dollop of salsa.  The name comes from the cut of beef originally used to make fajitas - but of course you can make them your way, with succulent chicken, colourful veg - whatever you fancy!

What’s a burrito?

The name ‘burrito’ translates as ‘little donkey' and is thought to refer to the folded end of the tortilla, which looks a bit like a donkey’s ear! Seriously satisfying, a burrito is a soft warm flour tortilla filled with hot and hearty rich chilli beef, crisp lettuce and juicy tomato, topped off with melted cheese. One end of the tortilla is tucked in to make a snug pocket which keeps the filling inside.

What’s an enchilada?

An enchilada is a soft corn tortilla wrapped around a filling, then covered with a tomato or chilli sauce, sprinkled with cheese and baked in the oven until golden and bubbling. ‘Enchilar’ is a Spanish verb meaning ‘to make spicy’!  We love to stuff ours with tender pieces of chicken – but you can make yours any way you like!

What’s a quesadilla?

Think Mexican cheese toastie! Oozing melted cheese sandwiched between two soft corn tortillas and pan-toasted until golden brown. Sometimes chunks of chicken are added - but however you have them, they’re a serious treat to the taste buds!
